Apple Cinnamon Einkorn Pancakes

Ingredients

  • ¾ cup milk

  • 1 tablespoon distilled white vinegar

  • 1 egg

  • 1 tablespoon melted butter

  • 1 cup einkorn flour

  • 1 teaspoon ground cinnamon

  • 1 teaspoon baking powder

  • ¾ teaspoon baking soda

  • 1 pinch salt

  • 1 apple

Description

  1. Combine milk and vinegar in a small bowl and set aside to sour, about 5 minutes. Add egg and melted butter; beat until well combined.

  2. Combine einkorn flour, cinnamon, baking powder, baking soda, and salt in a large bowl. Stir well, then add milk-egg mixture. Fold together gently; do not overmix.

  3. Grate the apple, with or without the peel, until you reach the core. Add grated apple to the pancake batter and fold in gently.

  4. Heat a lightly greased griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 1 to 2 minutes. Repeat with remaining batter.
