Blueberry Almond Yogurt Toast
This yogurt toast mimics the rich, creamy flavor and texture of French toast and can be adapted to use all kinds of fruit and nuts.
Ingredients

1 egg

¼ cup plain Greek yogurt

3 teaspoons maple syrup

1 teaspoon fresh lemon juice

1 pinch kosher salt

2 slices brioche or another soft bread

1 cup blueberries and/or blackberries

¼ cup slivered almonds

½ teaspoon sugar

1 teaspoon honey
Description

Preheat air fryer to 350°F.

In a small bowl, whisk together egg, yogurt, maple syrup, lemon juice, and salt until completely smooth and fully blended.

Using a small glass or the back of a spoon, firmly press a divot into the center of each slice of bread, leaving a border around the edges to contain the custard. Spoon custard into each divot and top with berries and nuts. Sprinkle sugar on top.

Cook yogurt toast in air fryer for 5 minutes, until custard is caramelized and the bread is toasted around the edges. Drizzle with honey and serve.
