Homemade Pistachio Cream

Ingredients

  • 1 1/2 cups raw unsalted shelled pistachios

  • 3/4 cup whole milk, or as needed, divided

  • 1 cup white chocolate chips

  • 2 tablespoons unsalted butter

  • 2 tablespoons confectioner's sugar, or to taste

  • 1/2 teaspoon kosher salt, or to taste

  • 1/2 teaspoon almond extract, or to taste

  • 1/4 teaspoon vanilla extract, or to taste

Description

Bring a pot of water to a boil over medium heat. Add pistachios and boil for just 2 minutes. Drain pistachios, rinse thoroughly with cold water, then drain again.
