Lemony Spaghetti with Parmesan & Thyme

Ingredients

  • 8 ounces whole-wheat spaghetti

  • 2 tablespoons butter

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon chopped fresh thyme leaves

  • 1 tablespoon lemon juice, or more to taste

  • 2 teaspoons lemon zest

  • ¼ teaspoon salt

  • ¼ teaspoon ground pepper, or more to taste

  • ⅓ cup grated Parmesan cheese

Description

  1. Bring a large saucepan of water to a boil. Add spaghetti and cook according to package directions. Reserve 1/4 cup pasta water, then drain.
  2. Return the pot to medium heat. Add butter, oil, thyme, lemon juice, lemon zest, salt, pepper and the reserved 1/4 cup pasta water. Stir to combine. Return the spaghetti to the pot along with Parmesan. Toss well to coat. Serve hot.
