Coconut Milk Pancake

Ingredients

  • 1 ¼ cups all-purpose flour

  • 1 ½ tablespoons white sugar

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 (14 ounce) can coconut milk, well shaken

  • 1 egg, beaten

  • 1 tablespoon unsalted butter, melted

  • 1 teaspoon vanilla extract

Description

  1. Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl. Whisk coconut milk, egg, butter, and vanilla extract together in a separate bowl; stir into flour mixture just until batter combined.

  2. Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 1 to 2 minutes. Repeat with remaining batter.
