Mango Ginger Rice

Ingredients

  • 2 tablespoons canola oil

  • ¼ cup chopped dried mango

  • 2 teaspoons minced fresh ginger root

  • 1 cup uncooked jasmine rice

  • 2 cups water

  • ½ teaspoon salt

  • ¼ cup chopped green onions

  • 2 tablespoons chopped fresh cilantro (Optional)

Description

  1. Heat oil in a saucepan over medium-low heat. Saute mango and ginger until fragrant, 2 to 3 minutes. Add rice and saute, stirring often, until rice appears translucent, about 5 minutes. Pour in water and salt; bring to a boil. Reduce heat and cover; cook until water is absorbed, about 20 minutes.

  2. Transfer hot rice to a serving dish and top with green onions and cilantro.
