Smothered Cabbage with Ham

Ingredients

  • ¼ cup neutral oil, such as canola or avocado

  • 1 medium onion, chopped

  • 1 cup diced ham

  • 2 large cloves garlic, minced

  • 10 cups coarsely chopped green cabbage

  • 1 cup low-sodium chicken broth

  • 2 medium Yukon Gold potatoes, cut into 1/2-inch chunks

  • ½ teaspoon salt

  • ½ teaspoon ground pepper

  • 1 tablespoon cider vinegar

Description

  1. Heat 1/4 cup oil in a large pot or Dutch oven over medium-high heat. Add onion and cook, stirring, until starting to brown, about 3 minutes. Add 1 cup ham and 2 minced garlic cloves; cook, stirring, for 1 minute. Add 10 cups cabbage, 1 cup broth, potatoes, 1/2 teaspoon salt and 1/2 teaspoon pepper. Bring to a boil, then reduce heat to maintain a simmer; cover and cook, stirring occasionally, until the potatoes are tender, about 15 minutes. Remove the lid, increase heat to medium-high and continue cooking and stirring until most of the liquid has evaporated, 10 to 12 minutes. Stir in 1 tablespoon vinegar.
