Air Fryer Apple Bacon French Toast Cups

5 slices bacon, crisp-cooked

4 cups (3/4-inch) brioche cubes

1 honeycrisp apple, finely chopped

1/4 cup chopped pecans

Whisk together milk, eggs, brown sugar, vanilla, espresso powder, cinnamon, and salt in a large bowl.

Crumble 3 slices bacon. Add brioche cubes, apple, and crumbled bacon to custard mixture; toss to combine. Let stand to allow brioche to soak up custard mixture, 10 minutes.

Divide brioche mixture among 8 (2 1/2-inch) silicone muffin cups (cups will be very full). Top with pecans.

Working in batches as needed, place muffin cups in an air fryer basket. Cook at 350 degrees F (180 degrees C) until puffed and golden, 10 to 12 minutes. An instant-read thermometer inserted into centers should register 165 degrees F (74 degrees C). Remove from air fryer and let stand 10 minutes.

Meanwhile, break remaining 2 slices bacon into 8 pieces. Top each French toast cup with 1 piece of bacon.
