Grilled Scallops

Ingredients

  • ¾ cup butter

  • ⅔ cup chopped onions

  • 3 cloves garlic, chopped

  • ¼ cup fresh lemon juice

  • 1 pinch salt

  • 1 ½ pounds sea scallops

  • ⅓ cup chopped fresh parsley

Description

  1. Preheat an outdoor grill for medium heat and lightly oil grate.

  2. Melt butter in a saucepan over medium heat. Add onion and garlic; cook and stir until soft, about 5 minutes. Remove from heat; stir in lemon juice and salt. Place scallops in a large bowl, and toss with butter mixture; let stand for about 2 minutes.

  3. Thread scallops onto skewers, or use a wire grill basket. Cook on preheated grill until scallops turn opaque, turning once, about 4 to 5 minutes.

  4. Return remaining butter mixture to saucepan; bring to a boil, then reduce heat to low and keep warm while scallops cook. Toss or brush over grilled scallops and serve.
