Oatmeal Pancakes
I make these oatmeal pancakes for my kids. The recipe is so simple — the batter with oats and buttermilk is prepared in a food processor or blender, so it's ready to cook in minutes. Serve with syrup and butter or a dollop of applesauce.
Scrumptious Shrimp Scampi Linguine
I've been buying a well-known frozen dinner bag that's absolutely fantastic, but rather expensive. So I checked the ingredients, searched scampi recipes online, and created this scrumptious shrimp scampi linguine by adding, subtracting, and tweaking them. This is my first!
Black Forest Pancake Cake
The classic dessert gets reinvented as a show-stopping centerpiece for your next brunch. Serve immediately or refrigerate up to 2 hours. Pass extra cherry puree to drizzle on top.
Pancake Pops
Transform leftover pancakes into these adorable pan-'cake' pops. Sweetened with cream cheese frosting and coated with a sticky cinnamon-maple glaze, this recipe takes pancakes from breakfast to dessert in no time. If you like more texture in the truffle, don't pulse the pancakes up too fine. These easy treats are a fun project for kids and taste just like an indulgent bite of Saturday breakfast.
Kropsua Finnish Pancake
A quick and easy Finnish egg pancake that is great plain, with salt and pepper, maple syrup, or with your favorite pancake topping.
Baked Shrimp Scampi
I've probably been making this recipe since I got it from my Mom in about 1985. I have no idea where she got the recipe from. I've been changing it over the years, and now I call it my own. When we started dating back in 1997, my husband would every now and then order shrimp scampi at a restaurant and always regret it afterwards, saying none of them competed with mine. You can vary the amounts of some of the ingredients, like the cayenne and garlic, to suit your taste. That's what I've done here because we like spicy and garlicky. Yum! Serve over angel hair pasta or any pasta of your choosing.
