Pasta Deli Salad
Cold pasta salad inspired by a deli counter—likely includes meats, cheeses, pickles, and a tangy dressing. Bold and satisfying.
Ingredients
- 1 (16 ounce) package tri-color pasta
- 1 (8 ounce) bottle Italian-style salad dressing
- 1/2 pound hard salami, cubed 1/2 pound provolone cheese, cubed
- 2 small red onions, diced (optional)
- 1 cup diced green bell pepper 1 cup diced red bell pepper
- 1/4 cup grated Parmesan cheese 1 stick pepperoni, chopped
Description
- Bring a large pot of lightly salted water to a rolling boil over high heat. Cook the pasta in boiling water, until the pasta has cooked through but is still firm to the bite, about 12 minutes. Drain.
- Combine the pasta and the Italian dressing in a large bowl. Add the salami, provolone, red onions, bell peppers, Parmesan, and pepperoni; stir until well combined. Cover, and chill 2 hours or overnight.
